Chicken & Dumplings

in an effort to become better cooks, we have tried different recipes every week. most of the time it is something simple – pasta, pancakes, bbq.

this week we decided to go for something that requires a recipe and decided on chicken & dumplings. when i called my mom for the recipe, she told me it was never written down – my grandma guesstimated all of it and so does my mom. the measurements below are a good starting point.

ingredients:

  • 1 rotisserie chicken, deboned

  • 2 cups chicken broth

  • 4 tablespoons butter

  • salt & pepper

  • 2 packages biscuits

  • 1 cup milk

  • 1 cup half & half

directions:

  1. debone chicken

  2. bring chicken broth & butter to a boil

  3. add salt & pepper, to taste

  4. add chicken pieces

  5. add biscuits to boiling broth, pinch off & drop in

  6. add milk

  7. add half & half

  8. if needed, add flour to thicken broth

notes from me! the biscuit dough was pretty “wet,” i lightly dusted them with flour before pinching them off to put in the pot – the first few i put in just stuck together. i added a cup of half & half, chicken broth and milk, and 1 tablespoon of flour at the end to thicken up the mixture. the key is to stir constantly to keep it from sticking and burning.
